W&L NO. 033: CAMILLO
Outside of drinking dry and refreshing saisons during the summertime, we love a good cocktail – and it’s hard to beat a well-made negroni. That’s why we’re so excited to share this latest W&L installment. This beer began as a super saison hopped with Loral and Azacca, and then macerated with 1 lb per barrel of amazing blueberries from @bowhillblueberries provided by our friends @farmstandlocalfoods. We then dosed the beer with freshly foraged, highly aromatic young Doug Fir tips from Fall City, which introduced a character reminiscent of red vermouth. Naturally, this inspired us to emulate the classic, refreshingly bitter elements of a negroni. We steeped fresh basil picked from Matt’s garden along with lemon zest to round out the herbal and fruity side of the cocktail. Finally, after a few trials and sensory testing, we found the right balance of dosing the beer with campari. The result is something we’re extremely proud of: a complex bitter yet fruity saison, with enough malt structure to capture the strength of a cocktail. Camillo finishes nice and dry, as it should, to make it an extremely sippable creation. Camillo is a side stream from a beer we brewed with Washington Wild, a conservation nonprofit leading an international coalition opposing mining in the Skagit Headwaters. Learn more! Come on down and try a glass of Camillo, available only on draft when we open at 3!
